I was planning to be back in Lincoln on Wednesday, but I must extend my stay in Argentina for another couple of weeks. My Dad passed away last Saturday morning, and I need to be here to help organize things.

I was just informed that the RO water system is down in the building, which means that autoclaves and glassware washers cannot be used at this time. The service provider is working with Nebraska Nova on getting parts to repair the unit. Please plan on not using the autoclaves or washers starting now through Friday morning. By Friday morning we will know if the parts have been procured and repairs are underway. I will send another note updating everyone as to the status of the RO unit.
Dr. Hallen-Adams has a small autoclave in the third floor autoclave room that she has said people can use for small loads that does not require the RO system. Please contact her if you would like to use it.

“Modeling the Survival of Salmonella in Beef Jerky: Influence of Product Thickness and Temperature on Dehydration Rate and Microbial Inactivation”
Kassim Sulleyman is a graduate student currently pursuing a Master of Science degree in Animal Science with an emphasis on Meat Science and Muscle Biology at the University of Nebraska–Lincoln under the supervision of Dr. Byron D. Chaves. His research focuses on evaluating the survival of Salmonella in beef jerky, specifically examining the effects of slice thickness, drying temperature, and post-drying storage. Kassim’s work integrates microbial challenge studies and predictive modeling to support the development of safer, shelf-stable meat products. He holds a Bachelor's degree (Agriculture Technology) and an MPhil Animal Science from the University for Development Studies-Ghana.
